America is a combination of many countries. Consequently American cooking is from all over the world. While being a diplomatic wife I lived in a town that had only one restaurant that was western. The Taiwanese are extremely hospitable and invited us out to very lavish meals. The only way I knew to reciprocate was give them something they couldn’t buy. American cooking was the only think I could think of. I started inviting people once a week to sit down dinners. A sit down dinner was too embarrassing for many of the Chinese because they were embarrassed that they didn’t know how to use a knife and a fork. What was even worse they wouldn’t know which knife or fork to use. As a result I started giving classes on western table etiquette. Some of it I wasn’t even sure of myself but my trusted book called the joy of cooking had millions of recipes if you knew how to cook and all the table etiquette that we consider correct in our society. I stopped doing sit down dinners as I was trying please our new friends not embarrass them. That worked out quite well. Then we augmented the dinners to have chamber music performances as part of the entertainment. We would invite approximately 30 people almost every Friday night. The wife of a famous cellist Claus Adam used to always do this at their home. I modeled the meals after Eleanor’s chamber music parties. It was a great success. First I served drinks and appetizers when everyone came in. Then we had a short concert of 20 to 30 minutes. Then I served the food buffet style. By having the concert first everyone had something in common to talk about. This was how I developed the US Consulate in Taiwan. It was very successful.
